New Generation: A New Expression of Caturra
Finca Milan named this lot NG, short for “New Generation.” The name expresses the farm’s belief that thoughtful processing can create an exceptional flavor experience from Caturra, a widely cultivated coffee variety.
Roasted light, Culturing NG opens with expressive rose and lychee notes, followed by tropical fruit flavors reminiscent of peach, pineapple, and guava. A gentle white tea character carries through the finish.
Our head roaster, Keita, selected this coffee without hesitation at the cupping table. It was also warmly received during our preview release at SCAJ 2026, where many visitors chose to purchase beans after tasting it. We invite you to discover this new expression of Caturra.

Culturing: Developing Flavor Through Microbial Activity
Culturing is a fermentation method that Finca Milan has dedicated itself to developing. It uses a starter culture—a selected community of yeasts and bacteria—to guide fermentation and develop the coffee’s aroma and flavor.
For Culturing NG, the starter culture is prepared using mangosteen and pineapple as a base. Microbial composition, quantities, fermentation time, and temperature are adjusted toward the intended cup profile.
Understanding how microorganisms work and contribute to flavor is central to Milan’s approach. Ongoing research and practical experimentation support the farm’s distinctive coffees.
Café Uba and Finca Milan: Exploring New Flavors in Colombian Coffee
Café Uba is a producer group based in Risaralda, Colombia. Across farms including Milan, La Riviera, and Buenos Aires, the group explores diverse coffee varieties and processing techniques. Its coffees have appeared in international competitions, bringing new expressions of Colombian coffee to audiences around the world.
At Finca Milan, farm owner Julio Madrid and processing specialist Andres Quiceno explore the possibilities of fermentation. Working with universities and research institutions, they continue to develop processing methods, including Culturing.
Milan also has a close relationship with Japanese importer DA VIDA JAPAN, bringing a range of distinctive lots to Japan each year. Following the Sudan Rume from La Riviera that we have featured at LiLo, this Culturing NG offers another expression of Café Uba’s spirit of exploration.
